Take a walk (and a taste!) through two powerful regenerative farming systems—side by side, working in harmony to feed the community and the Three Blue Ducks restaurant here at The Farm. Start your tour with long-term growers, Josh and Lynette of Greens from the Farm. Their 1.5-acre market garden shows what’s achievable on a small scale. With a focus on soil health, seasonal rhythms, and hard-earned know-how, they grow a riot of nutrient-rich greens, herbs, edible flowers—and the occasional cult favourite like garlic scapes. Rooted in regenerative practices like compost-fed soils, and minimal tillage, their spray-free produce makes its way to local markets and straight onto the Duck’s Menu. Then, wander into the lush Food Forest with Bunya and Flavia of Growing Roots Permaculture. Over the past eight years, they’ve transformed a former paddock into a dynamic, self-sustaining ecosystem—part farm, part classroom. Through fruit trees, perennial crops, natives, and ground covers, their system creates microclimates, retains water, and rebuilds soil—thriving even through droughts and floods. It’s a living example of working with nature, not against it. + Katerina: Zero Waste Fermentation Masterclass $22 (bookings essential) I 1.00pm-2.00pm I Meet at the Farmhouse I Join fermentation expert, Katerina, of Byron Fermentary, for a one-hour, hands-on masterclass and discover how to transform one seasonal ingredient into three different gut-nourishing ferments—with zero waste! Hi-D
Hi-D
At Hi-D we love mushrooms, we love good health, and we love the amazing food growing options in the Northern Rivers. We are proud to offer you a wholefood, organic, plant-based option for Vitamin D. Most options available are either chemically processed or chemically extracted from sheep's skin lanolin. We use locally grown local organic mushroom to make the first natural wholefood organic Vitamin D from medicinal mushrooms (such as shiitake and oyster) available in Australia. Our Vitamin D – obtained with our own invented technology – is 100% shiitake mushrooms, and nothing else! No additives, chemicals, preservatives, GMO, no nasties! Using local suppliers, we love to contribute to the regional circular economy! Finally, sustainability is our middle name! Because we do not use any chemicals, additives, etc. and not even water (!!!), and because mushrooms have one of the lowest carbon footprints of all foods, our products are highly environmentally sustainable. Come chat with us and try some Hi-D for yourself!
